The $5 Dinners Weekly Meal Plan with Printable Grocery List

Every week I will post 5 links to archived recipes, plus an additional 1 or 2 recipes for breakfast, snacks or batch cooking recipes.  You can click through to see the original recipe and print that recipe if you like. (Or go green and just come back to this post to get to the recipe.)

Scroll down and you’ll see a list of ingredients for each of the recipes included, in the order they are listed above. I’ll include ALL ingredients, including many that you already have in your pantry, refrigerator, or freezer. If you have those ingredients, just don’t click them!

Put a check mark by each of the ingredients, and then print your grocery list and be on your way to the grocery store!

Chicken and Spinach Enchiladas

3 cups cooked, shredded chicken
16 oz. container sour cream
2 10 oz. boxes frozen spinach
4 cups shredded pepper jack cheese
2 Tbsp minced onion
2 tsp minced garlic
2 tsp ground cumin
18 to 20 soft taco size flour tortillas
2 10 oz. cans green chile enchilada sauce

Stromboli

1 tube 11 oz. ready-made thin crust pizza dough
1 package shredded cheese (8 oz or 16 oz depending on how cheesy you like it!)
other fillings as desired
spaghetti sauce for dipping

Mushroom Ricotta Stuffed Pork Chops

8 or 9 Pork Chops
1 tablespoon oil
1 small onion
8 ounces mushrooms
1 teaspoon thyme
1/2 teaspoon rosemary
2 cups breadcrumbs
200 g ricotta cheese
1 egg

Mushroom Barley Soup

2 Tbsp butter or margarine
1 small onion
2 carrot stalks
2 garlic cloves
About 8 oz. of mushrooms
4 cups homemade chicken broth
1 cup pearled barley
2 tsp dried dill
2 tsp fresh parsley

Winter Vegetable Chili

1 1/2 lb ground beef
1 small onion
2 garlic cloves
1 15 oz. can diced tomatoes
2 cups beef broth
3 small sweet potatoes
3 carrot sticks
2 large parsnips
1 1/2 Tbsp chili powder
1 tsp cinnamon

Southwest Mac ‘n Cheese

1 lb. elbow macaroni noodles
8 oz. sour cream
10 oz. Rotel diced tomatoes with green chilies
2 cups cooked black beans, or 15 oz. can black beans
15 oz. can corn
2 cups Mexican blend cheese, or Pepper Jack cheese blend

Cashew Caramel Brownies

4 oz. bittersweet baking chocolate
1 cup (dairy-free) margarine or butter
2 cups chocolate chips
4 eggs
1 3/4 cup sugar
2 tsp vanilla
1 cup flour
1 tsp baking powder
20 caramel chew candies
1 cup cashews

The Mushroom & Ricotta Stuffed Pork Chop Recipe will not print. It only prints out the second page & the only thing on that is…

I can’t get the page to fully load ont eh Mushroom Ricotta Stuffed Pork Chops. It looks wierd. Is there a fix for it? I would reall love this recipe. BTW your blog Rocks!!!!! Thanks
