Every week I will post 5 links to archived recipes, plus an additional 1 or 2 recipes for breakfast, snacks or batch cooking recipes.  You can click through to see the original recipe and print that recipe if you like. (Or go green and just come back to this post to get to the recipe.)

Tired of turkey yet? This week we’ve got a wide variety of options for you…none of them turkey-based ;) Enjoy!

Slow Cooker Maple Chicken with Sweet Potatoes

1 pkg (about 1.5 lbs.) boneless skinless chicken thighs or chicken breasts
About 3 Tbsp maple syrup, drizzled over chicken
3 medium sweet potatoes
About 1/2 lb. baby carrots (or 4-5 peeled carrots sticks)
1 small red onion

Alea’s Tortellini Soup

1 tablespoons olive oil
1/2 cup onion
1 stalk celery
2 cloves garlic
1/2 cup carrots
4 cups vegetable or chicken broth
1 3/4 cups black beans or 1 can of black beans
1 14.5 oz. can diced tomatoes
1 1/2 teaspoons parsley
1 teaspoon basil
1/2 teaspoon fresh oregano
1/4 teaspoon dried sage
2 – 3 cups  cheese stuffed tortellini
3  cups  fresh spinach

No Boil Freezer Manicotti

2 cups cottage cheese
1 ½ cups mozzarella cheese
1 ½ teaspoons Italian Seasoning
1-8oz. package manicotti
½ cup mozzarella cheese
¼ cup Parmesan cheese
Jar or can of favorite marinara sauce

Slow Cooker Beef Roast with Apples

1 1/2 to 2 lb. beef roast
3 medium sized apples
1/2 lb. baby carrots or peeled carrots
8 small red potatoes
1 cup frozen pearled onions
Garlic and Onion seasoning

Mexican Chili Topped Potatoes

4 large baking potatoes
About 1 lb. ground beef
2 15 oz. cans “chili ready” diced tomatoes or 2 15 oz. can of diced tomatoes + chili powder and 1 cup chopped onions
3 cups cooked red kidney beans or 2 15 oz. cans drained red kidney beans
1 1/2 Tbsp homemade taco seasoning
2 garlic cloves
Optional: butter for the potatoes
Serve with steamed veggies

Pumpkin Pecan Granola

1/3 cup applesauce
1/2 cup pumpkin puree
3 Tbsp maple syrup
1/2 tsp almond or vanilla extract
2 cups quick cooking oats
2 cups traditional oats
1/4 cup brown sugar
1/4 cup flaxseed (optional)
1 tsp cinnamon, nutmeg, ginger – each
1 cup pecans
1 cup raisins
Serve as is or over yogurt or milk
