Lindsey’s Savory Butternut Squash Soup 1 medium butternut squash (2 cups roasted) 2 tablespoons vegetable oil 1 cup onion 2 cloves garlic 2 tablespoons dairy free margarine or oil 4 cups vegetable broth 1 medium russet potato 1/4 teaspoon cumin 1/4 teaspoon garlic powder 1/4 teaspoon onion powder Slow Cooker Cranberry-Apricot Pork Roast Approx. 2.5 lb. lean Pork Roast 5 small potatoes 1 small onion 1 can, whole-berry cranberry sauce 1 can apricot halves, in juice 1/2 cup chopped dried apricots 1/2 tsp. cayenne pepper 1 tsp. dry ground mustard 2 tsp. turbinado (or regular) sugar Slow Cooker Beef Roast with Balsamic Onions 1 – 2.6 lb. beef roast 2 onions 4 garlic cloves 1/4-1/2 cup balsamic vinegar Chicken Posole 1 tablespoon olive oil 1/2 yellow onion 4 cups homemade chicken broth 1 15-ounce can diced tomatoes 1 hot chili pepper 2 cups shredded chicken meat 1 15-ounce can hominy 2 tsp lime juice Serve with fresh broccoli and french bread Lentil and Brown Rice Casserole 3 cups broth (chicken or vegetable) 3/4 cups green lentils, although any color will do 1/2 cup brown rice 1/2 yellow onion 2 tsp Italian seasoning 1 tsp garlic powder 2 cups shredded sharp cheddar cheese 2 large broccoli heads Optional: Jazz up with spaghetti sauce, salsa, BBQ sauce, parmesan cheese.
