A family favorite from Kristy at Mommy Hates Cooking…
I was introduced to this recipe by my mother-in-law, one of many great recipes that she has passed on to me. It’s a simple, light version to taco salad and it’s guaranteed to satisfy the entire family!
Ingredients
1 lb Lean Ground Beef or Lean Ground Turkey
1 Packet of Taco Seasoning
1 15 oz Can of Ranch Style Beans
1 2.25 oz Can of Sliced Black Olives
1 Head of Leafy Green Lettuce
1 Bottle of Fat Free Catalina Dressing
1 Bag of Fritos
Mexican Shredded Cheese
Start by browning the ground beef or turkey and add the taco seasoning as instructed on the package. While this is cooking start shredding the lettuce for the salad and get all the ingredients opened and ready.
Once the beef is done cooking it’s time to build your salad. I start by adding a layer of lettuce, then ranch style beans and black olives. I top it off with some Mexican cheese, Fritos, and Catalina dressing. Sliced tomato is another great addition to this salad. Then, I enjoy my delicious taco salad.
This is also a great meal if you like to cook the meat in advance. Just cook the taco meat and put it in the freezer and warm up when you are ready to fix the taco salad.
I am fairly certain my mother-in-law figured out I did not like to cook early while I was dating my husband, so this recipe was right up my alley!
This is so good, even my toddler enjoyed it!

We also like making this with veggie ‘recipe crumbles’ (fake meat) and layering over cool-ranch doritos. Not quite so healthy but yum
I like to do a 50/50 mix with Catalina dressing and picante sauce. Catalina can be overly sweet. I like those quick and easy recipes. Thanks!

I make this with chicken and nacho cheese Doritos. It’s soooo good!
I love this recipe. Only I use western dressing and doritos.
Maybe this is a regional thing, but we do a “Taco in a bag” by using either fritos or doritos in the individual serving size bags and make the whole thing right in the bag (then eat it right out of the bag), like you can get at fairs and most all sporting events around here. We use salsa, beef, sour cream, lettuce, onion, cheese and lots of jalapenos.
put me in with the half ccatalina or western dressing and half salsa or picante crownd YUMMY! (and I’m glad to know I’m not the only one who likes that mixture!

Kristy: I love this because whenever I make a taco or burrito I end up cutting it up and eating it with a fork anyway.
I’m going to have to try the taco salad in the bag! Great idea, I’ve seen it at the fair but never really thought about doing that at home. I’m not a fan of salsa or picante as a ‘dressing’; however, my hubby loves picante, so I’m going to tell him to try that next time. I bet he’ll love it!
I wish you would put protein, carb, fat, fiber so I would know how many points I’m eating.
