Dilled Tomato Sauce over Rice & White Beans

Because this recipe is a Mediterranean twist on tomato sauce and is served over rice.

Servings - 4 servings

Ingredients 

  • 28 oz, can diced tomatoes
  • 2 cups cooked white beans or 2 - 15 oz. cans white beans
  • 1 Tbsp dried dill
  • 1 Tbsp olive oil plus extra for serving
  • Salt, red pepper, and black pepper, to taste
  • Cooked rice for serving

Instructions

  • Halve the grape tomatoes or open the canned tomatoes.
  • Pour 1 Tablespoon of olive oil in a pan. Turn stove on medium-low.
  • Add tomatoes, beans and dill.
  • Add salt and peppers to taste. Think: enough of each pepper to add flavor without too much heat.
  • Cook until the tomatoes soften and release their juices, about 40 minutes.
  • Ladleover cooked rice.
  • Drizzle with a generous amount of good olive oil.
  • Enjoy!
