This week I’m giving away a Pampered Chef Deep Covered Baker to 1 lucky reader.
Lemme share this quick story with you (and nope…not being paid to share it!) A few weeks ago, I was doing a photoshoot for the cookbook and we were running a little behind schedule. I didn’t want the photographer to have to wait an hour while the chicken baked in the oven. I remembered that I had just received this deep covered baker in the mail and, having skimmed through the recipes, knew that it would cook the meal twice as fast if I threw it in the microwave.
So, I loaded all the ingredients into the deep covered baker and popped it into the microwave for 24 minutes. Voila!
Done in half the time (that particular recipe normally bakes 50-60 minutes in the oven!). And not only that, but my kitchen didn’t get HOT because I made it in the microwave!
I will be sharing another recipe for tonight’s dinner that I cooked in the deep covered baker…in the microwave!

My favorite casserole is made with noodles, ground beef, tomatoes and whatever I have in the fridge. It is really inexpensive and the kids like it, too.

Mine and my hubby’s fave casserole is almost so easy to make it’s embarrassing. We love Chicken Poppyseed casserole. Shredded chicken, cream of chicken soup, sourcream, and poppyseeds call stirred together and topped with Ritz crackers. I do use lowfat soup and sourcream so that makes it better, right?

“I love the delicious Chicken&egg noodle casserole!”
My fav caserole is coined barf caserole- because it looks just like it… Maybe it’s called chicken a la king? A can of salsa mixed with a can of cream of something soup plus 1/2 C milk or water mixed together with 3/4 # shredded chicken, plus corn tortillas and shredded cheese (cheddar or a blend). Layer the ingredients twice starting with the soupy mixture first and ending with the tortillas. Top with the cheese and bake at 350 20ish minutes. Viola! Serve with a side salad or sauteed zucchinni & yellow squash or steamed veggies. Yum!!! My kiddos love this just as much as I loved it growing up!

One of my families favorite winter/fall dishes is Homemade Apple Crisp! I used to sell PC and LOVE all of their products and use them all the time. I would love to adapt my recipe to bake in the Deep Dish Baker. My recipe uses ingredients that you find in your pantry and so all we do is buy the apples and my children love to help me in the kitchen so this makes this dish something that is also making fun memories that I hope they pass on!
