This week I’m giving away a Pampered Chef Deep Covered Baker to 1 lucky reader.
Lemme share this quick story with you (and nope…not being paid to share it!) A few weeks ago, I was doing a photoshoot for the cookbook and we were running a little behind schedule. I didn’t want the photographer to have to wait an hour while the chicken baked in the oven. I remembered that I had just received this deep covered baker in the mail and, having skimmed through the recipes, knew that it would cook the meal twice as fast if I threw it in the microwave.
So, I loaded all the ingredients into the deep covered baker and popped it into the microwave for 24 minutes. Voila!
Done in half the time (that particular recipe normally bakes 50-60 minutes in the oven!). And not only that, but my kitchen didn’t get HOT because I made it in the microwave!
I will be sharing another recipe for tonight’s dinner that I cooked in the deep covered baker…in the microwave!

My favorite fall casserole is sweet potato casserole for Thanksgiving. I usually make traditional marshmallow sweet potatoes and the casserole kind w/ candied pecans on top. Some guest prefer each kind.

Here’s a casserole recipe for using WITH the Deep Covered Baker:
Chicken Tortilla Casserole
1 poblano pepper or 1/2 onion diced up
1 1/2 lb boneless, skinless chicken thighs or chicken breasts
2 tbsp Southwestern Seasoning Mix
1/4 tsp salt
1 can (15 oz) black beans, drained
1 can (15 oz) sweet corn, drained
1 1/2 cups thick and chunky salsa
4 cups broken tortilla chips
1 cup (4 oz) shredded cheddar and Monterey Jack cheese blend
Snipped fresh cilantro (optional)
Dice up the onion and lay in the bottom of your Deep Covered Baker. Cut the chicken breasts into bite size pieces and put on onions. Sprinkle with Southwest Seasoning and stir to mix together. Cover with lid and microwave on high for 4 minutes; stir to separate chicken pieces, cover and cook for an additional 4-6 minutes or until chicken is done.
In separate bowl, add drained corn and black beans along with salsa. Mix together well. Add broken tortilla chips and stir lightly. Add this whole mixture to the chicken and stir to combine. Cook for an additional 2 minutes. Sprinkle with cheese and then cook for another 1 minute. Sprinkle with chopped cilantro. Serve with sour cream and additional salsa if desired.

This dish would be great for making one of my family’s favorite baked chicken dinner — I take a whole chicken, place it in a roasting pan and cover with a can of diced pineapple (drained), curry powder, salt and pepper. I add long grain rice to the bottom of the pan with free range chicken broth and a few dashes or worcestershire sauce….bake for about 1.5 hours at 350……I normally serve with honey glazed carrots….YUM! ;0)
