Cinnamon Roll Baked Oatmeal

I think we should call this one ‘break-ssert’ because it’s part breakfast, part dessert. I’ve been dying to share this for a few weeks…I let the $5 Meal Plan members have a sneak peek. And here it finally is!

This baked oatmeal is crazy-ridiculously delicious. It’s more of a dessert really. Or a weekend breakfast…perhaps a breakfast before a morning of basketball games at the gym. A morning where everyone will be running around busy, burning energy.

This is not one of those meals that I would serve my boys on a school morning. Because I just like their teachers too much. Ha.

This one of many baked oatmeal recipes that is on the website…this one being the most dessert-like, thanks to the cinnamon chips & white chocolate chips.

{Note about the cinnamon chips…one of my local stores doesn’t carry them, but the other one does. If you can’t find them, they are available on Amazon.}

Also, there are a number of recipes for Cinnamon Roll Baked Oatmeal that call for a a powdered sugar drizzle or cream cheese frosting topping…and that would certainly send this into the dessert category. I’ve left that off, but you can certainly add it if you’d like!

Cinnamon Roll Baked Oatmeal

Cinnamon roll... in a bowl. Does breakfast get any better than this?!

Cook Time30 minutes
Servings - 12 servings

Ingredients 

  • 3 cups quick cooking oats
  • 1/2 cup flour
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1/2 tsp salt
  • 2 eggs
  • 1/2 cup oil
  • 1/4 cup sugar
  • 2 cups milk
  • 12 oz bag cinnamon chips
  • 6 oz white chocolate chips
  • Milk, cream or yogurt for serving

Instructions

  • Preheat oven to 350. Spray a 9x13-inch glass baking dish with non-stick cooking spray.
  • Mix all the ingredients together in a stand mixer or large mixing bowl. Batter will be 'loose' and then you can fold in the cinnamon chips and white chocolate chips.
  • Bake in the preheated oven for 25 to 30 minutes, or until set in the middle.
  • Serve Cinnamon Roll Baked Oatmeal warm with milk, cream or yogurt.
