I finally decided to try making my own version. Using this recipe, you can make 8 small pizzas that are 7″ in size. These can be frozen and quickly heated later on a busy night. Or you can have them available for the children at any time.

I use an easy, no-yeast pizza dough recipe I made up years ago, when we didn’t have any yeast in the house. It has seasonings to help create a nice flavor. The dough is quick and easy to work with. No need to let it rest or rise.

After you have your dough ready and divided, the pizza crusts will be ready to pre-cook. In the photograph below, you will see 4 of the 8 pizzas, ready for sauce and toppings.
<div

The same afternoon I made some whole wheat, sugar free muffins (I will share the recipe as soon as I can make them again…I need to get my hands on some more sucanat first!). The afternoon I was feeling pioneer-ish!

My neighbor was over and our kids were playing around the yard. We were catching up, talking about the upcoming school year…and she was watching me and my pioneer-ish ways in action. I explained as I made the homemade ranch dressing. And she walked out with me to the “back garden” to pick tomatoes. And she watched in awe as I sliced the avocado in the palm of my hand.

(I think I might have caught her taking notes.)

She enjoys learning and watching as I cook. Or grill, in this case. And I enjoy teaching her a few tricks here and there too!

I made my traditional pizza crust dough in the bread machine, but replaced the white flour with wheat flour and used honey in place of sugar (remember my goal for August!) And for whatever reason, it was huge. HUGE. It took up over 2/3rds of my grill…and I have a big grill!

The dough rose to the same height as normal, had the same amount of flour, liquid, etc. But when I rolled it out, it was nearly double in size. Not sure of the reason…better consistency with the all whole wheat flour…no. idea.

So the crust…topped with one of my favorite flavor combinations…tomatoes, avocado, ranch and cheddar. With some grilled chicken pieces. Then, finally cooked on the grill.

De. light. ful!!!

(Other than the kind of cheese I had to use being terribly expensive (so the boys could enjoy this treat), this would be an inexpensive dinner for 4 when using regular shredded cheese!)
<div

That kind of pizza really does not agree with my system.

Before we started becoming more frugal, we had delivery pizza of this description about once a week. It was bad for our wallets and bad for our bodies. Over several months, I have gotten my family accustomed to enjoying less greasy pizzas — usually home made (when I plan ahead a wee bit) and sometimes, frozen (when I really don’t feel like cooking and I bought some on sale).

This pizza is a real hit at my house. It rather surprised me how much both my husband and my son both love this pizza. It is about a far away as you can get from the heavy, thick crusted, tomato laden, meat infused, cheese clogged stuff they used to love. It is a wonderful, delicious, even gourmet tasting delight that costs tens of dollars less than delivery, is far and away healthier and is delicious enough for the whole family to enjoy.

I got the pitas on sale for $1 for 8 of them, the ricotta on a discount, the sliced mushrooms on sale, the grated cheese from the freezer (bought on sale) and the garlic was a pantry staple. The four servings of pizza cost under $4.00. Even with the addition of the salad, the whole meal was under $5.00.

Serve these pizzas with a salad for a healthy, delicious and super quick and easy dinner.

Mushroom and “Roasted” Garlic Pita Pizzas

Serves 4

Ingredients

4 whole wheat pitas
1/2 cup ricotta cheese
8 ounces mushrooms
8 cloves garlic
1/2 cup mozzarella cheese, grated (or use whatever cheese you like or have on hand)

<img

Preheat the oven to 400 degrees.

Meanwhile, slice the mushrooms (I cheated and bought presliced — they were on sale).

Frugal Idea

Frugal tip: I almost never use commercial cleansers for my house. I use a combination of baking soda, vinegar, water, and shampoo. For general cleaning, I use a spray bottle of about 10% vinegar in water solution. For tough stains, I sprinkle baking soda on the stain or make a paste of baking soda and vinegar. Occasionally, I use a bit of shampoo to help with the cleaning.

I started using these products because I was hating the impact of these chemicals on my family and on the environment. As a major added bonus, they are also very much less expensive than commercial cleansers.

<span
