Also, this is another example of a meal that uses an &#8220;expensive ingredient,&#8221; that is paired with a few other inexpensive ingredients and pantry staples to keep the overall cost of the meal down.</p><p>(Feta = expensive&#8230;pasta/tomatoes/egg = inexpensive.)</p><p>This meal ended up being dinner for just Steve and I (the kids had leftovers since they can&#8217;t have dairy) and after his first bite, Steve began staking claims on the leftovers. He took what was left for lunch to work the next day&#8230;and the &#8220;euchre lunch club&#8221; was insanely jealous of his &#8220;gourmet lunch.&#8221; Amazing how a few simple ingredients can be cooked up in a way that is &#8220;gourmet&#8221; but still very inexpensive to put together!</p><p><strong>Enjoy&#8230;</strong></p><div

Drain and rinse with cold water. (If you don&#8217;t rinse, the heat from the pasta can cook the eggs in the cheese mixture&#8230;so get them nice and cool before combining.)</li><li>Meanwhile, in a large, ovenproof skillet, heat the olive oil and balsamic vinegar and saute the tomatoes and chopped onion, for 3 to 5 minutes, or until most of the tomatoes have &#8220;popped.&#8221;</li><li>In a mixing bowl, combine the Feta, Parmesan, mozzarella, milk and eggs. Once the pasta is rinsed and cooled, fold it into the cheese mixture.</li><li>Then combine the cheese-pasta mixture with the sauteed onions and tomatoes. Spread flat in the skillet.</li><li>Transfer the skillet to the preheated oven and bake for 30 minutes, or until eggs have set in the middle. When it was ready I used three of the breasts for supper then cut most of the rest into cubes and shredded the remainder.  I ended up with five packages of cubed chicken and three packages of shredded that can be used for all sorts of quick homemade meals like BBQ sandwiches, enchiladas, quesadillas, casseroles, pot pies, salads, fajitas, pizza, soups and pasta dishes.  I was also able to put four containers of chicken broth in the freezer.</p><p><a

I made it anyways, and it worked out perfectly&#8230;</em></p><p>Right before Christmas, Ryan woke up one morning with a fully body rash. After grilling him about what he ate at school the day before, thinking it was a delayed food allergy reaction, I made an appointment that morning with the pediatrician. She diagnosed him with Fifth disease, a virus that causes fully body rash in kids&#8230;and can cause rash, fatigue, joint pain and swelling in adults.</p><p>I commented to our pediatrician how I&#8217;d been feeling fatigue like I&#8217;d never felt before, along with some malaise but no other symtpoms. She told me to watch out for the symptoms above. And lo and behold I broke out into the rash the following week, and also ended up super swollen hands, very sore ankles and knees for about 5 days. I felt very much like a leper with the rash&#8230;and very much like an 80 year old woman with severe arthritis. But I welcomed the time I got to spend resting on the couch, and I enjoyed the time I got to spend reading with the boys as well!</p><p>According to my family practice physician sister, I got hit pretty hard with it, as it doesn&#8217;t usually hit adults as it did hit me. Most adults don&#8217;t get Fifth disease because they had been exposed to the virus as a child, built the necessary immunity and don&#8217;t have to worry about it as adults. Obviously I was never exposed to it as a child. And neither was my dear friend, Steph. Her son had it over Christmas&#8230;and he shared it with her. *sigh</p><p>Yesterday morning I get into a text conversation with her about all this Fifth disease madness. It took all of 3 milliseconds for me to figure out that I&#8217;d be taking her this mac n cheese, cookies, and other goodies for dinner last night. She is in the &#8220;worst of the worst&#8221; phase&#8230;and I wasn&#8217;t taking no for an answer! We are now in an exclusive &#8220;Moms with Fifth disease club&#8221; now&#8230;and we Fifth diseasers have to look out for each other <img

Bring the milk to a simmer (just as you start seeing little bubbles form).</li><li>Quickly turn it down to LOW. You don&#8217;t want the milk to heat too fast and boil over into a mess!</li><li>Let the macaroni cook in the milk mixture over the low heat&#8230;stirring often. And by often, I mean often&#8230;every 30 seconds. It will take 6-8 minutes from this point for the pasta to soak up all the milk. You need to stir because the pasta on the bottom will absorb the liquid, and you don&#8217;t want the pasta on the top to be chewy. So it needs to be turned over. You&#8217;ll see what I mean when you try it! If you think it needs a little more liquid, add water 1/4 cup at a time. The other easy part is the method to mix the  filling ingredients. You mix the filling in a freezer  bag by  kneading it.</p><p>You start by preparing your pans with sauce in the bottom.</p><p><a

Cheese prices range. I leave out the parmesan cheese sometimes and it’s still great. You can substitute ricotta, but try the cottage cheese. It makes a terrific ministry meal to give away to someone in need and it’s easy because there’s “no cooking” involved. P.S. /> Preparation Time - 5 minutes<br
/> Cooking Time - 32 minutes</p><h3>Ingredients</h3><ul><li>2 (16 oz.) boxes of elbow macaroni ( .89 cents each) $1.78</li><li>1 can (10.5 oz) cream of celery (condensed soup) $1.29</li><li>Around 3/4  cup bread crumbs  $ .50</li><li>Around 2 Tablespoons butter  $ .25</li><li>6 Slices American Cheese $1.00</li></ul></blockquote><blockquote
class="recipe"><h3>Directions</h3><ul><li>Grease bottom and sides of an 8&#8243; x 12&#8243; pan with butter.</li><li>Cook macaroni according to package directions, around 12 minutes.</li><li>Drain noodles, then return to pan.</li><li>Pour cream of celery over noodles. Stir together.</li><li>Lightly dust bottom of baking pan with bread crumbs. Then layer as follows:  1/2 the elbows; sprinkle bread crumbs;  torn pieces of cheese (using 3 of the slices); Then put remainder of the noodles over this; sprinkle the rest of the bread crumbs;  then top with the rest of the cheese.</li><li>Bake in a 350 degree oven for 20 minutes.</li></ul><h2>Cost $4.82</h2></blockquote></div></div><p><a

I had plans to make <a
href="http://premeditatedleftovers.com/taco-salad/" target="_blank">taco salad</a> and had already started browning the hamburger when I pulled the lettuce out of the refrigerator and discovered it had turned. I didn&#8217;t have a lot of time to come up with a new dinner plan. I surveyed the cupboards and fridge and decided to use the beans and tomatoes  that I was going to put in the salad, stick with taco seasonings and add corn and pasta. Then I said a quick prayer that it would turn out and my family would like it. It turned out well and my family loved it. It is now on my mental list of meals for busy nights because I can make it start to finish in about 15 minutes.</p><p>Really short on time? Then don&#8217;t peel your tomatoes when you dice them! The tomato peels have nutrients and fiber, so you can feel good about being lazy. <img

If you don&#8217;t have a large skillet, then after you rinse your pasta, return it to the pot you cooked it in and add all of the ingredients to that pot to finish cooking them.</p><div
