Cooler evenings call for spicy dinners to warm us up. I like to add rice to my chili to make it extra hearty. And I often include corn in my white chili because the sweetness of the corn provides a nice contrast to the spicy peppers. Adding rice and corn are fairly inexpensive ways to stretch chili a little farther. This recipe makes enough for two dinners for my family. I freeze the leftovers and then have a ready-made meal on a busy night.

I usually use shredded chicken in white chili, but when I scored a package of extra lean ground turkey for .99 cents, I decided that I needed to change things up a bit.

I make a point of checking the meat mark downs and organic produce markdowns EVERY time I visit a grocery store. I have found that the best time to find good deals is after 6:00 p.m. because the manager marks items down right before his shift ends or first thing in the morning. I never know what I am going to find, but if you want to find great sales you have to look for them.

Ratatouille is one of the most frugal dishes in my repertoire. When my garden is in full swing the only ingredient I have to buy to make this dish is olive oil. As much as I like ratatouille, I must confess it has a couple of downsides. First, if I turn on the oven on a hot July day and only have vegetables to show for it, I will have a mutiny on my hands. Which brings me to the second problem with ratatouille: it is entirely comprised of vegetables. It takes more than a Disney movie to convince my kids to eat ratatouille.

I can get around cooking this dish in the oven by grilling the vegetables individually and then combining them to make the ratatouille:

Convincing the kids to eat it is a little trickier. Here are a few things that work for me:

Serve salad dressing on top. My daughter will eat most vegetables as long as she is allowed to put salad dressing on them. She defended her decision to add Asian dressing by saying, “Ratatouille is basically just a cooked salad”.

Serve it over rice. My oldest son doesn’t mind that ratatouille is comprised entirely of vegetables. He minds that dinner is comprised entirely of vegetables. Serving it over rice helps fill the ever-growing teenager’s hollow leg.

Top it with spaghetti sauce. My youngest child is still at the stage where he prefers his ratatouille hidden under a thick layer of spaghetti sauce.

Substitute vegetables. I made this recipe with traditional ingredients, but there was a time when my husband and kids would not eat eggplant. If members of your family will not eat one of the vegetables in the recipe, you can substitute it with potatoes. I also try to add ingredients my family likes. I found some portabella mushrooms on sale and splurged since my husband enjoys them.

Chimichurri Sauce is a traditional Argentinian sauce. It is the consistency of pesto and is usually served over grilled steak. But I serve it over everything I can because it is a great way to use up surplus parsley and cilantro. I dial down the heat on this sauce for my children, but you can make it hotter by substituting a hot pepper for the bell pepper.

I love when the garden is in full production. Having a frugal source of fresh veggies and herbs allows me to either save money on groceries or splurge and stock up on organic, free-range chicken when it goes on sale. Guess what I chose?

Ingredients

1.5 lb pork shoulder or loin, cubed ($2.83)
2 Tbsp oil ($.05)
1 teaspoon ground cumin ($.05)
Salt and pepper
2 garlic cloves ($.10)
1/4 cup lime juice or juice from 1 lime ($.10)
1/4 cup water

8 corn tortillas ($.50)
Salsa, diced avocado, sour cream dollops to garnish ($.50)

Corn Cobs ($.80)

Directions

In a mixing bowl, toss the pork cubes in the oil and ground cumin. Season with a few dashes of salt and pepper.  Place in the base of the slow cooker.  Add the garlic, lime juice, and water.  Set on low and cook for 8 hours. Remove, let cool slightly, then shred with 2 forks.

(Toast the corn tortillas in a warm skillet.)

Boil corn cobs and serve as a side item.

Spoon the carnitas meat over the corn tortilla and top with salsa, diced avocado, and/or sour cream.

Devour.

Cost $4.93
