Something so basic and delicious.</p><p>I was not a fan of tomatoes until about 7 years ago. Some time during my days in the Dominican Republic, my taste buds morphed and decided to start liking tomatoes. Then I had to break the news to my Aunt Julie (the only family member on my moms side who didn&#8217;t like tomatoes either), and turns out&#8230;she recently started liking tomatoes. Hmphfff.</p><p>Well, now we can both enjoy these little goodies!</p><p>How these came about&#8230;I found some Sister Schubert&#8217;s dinner rolls in the freezer. Right next to a package of turkey bacon. So BLT Sliders it was. I had some lettuce and a tomato on hand. But when I went to get out the mayo, I decided that was too boring. So I grabbed some grated Parmesan and some spices and ended up with a delicious spread for our sliders!</p><p>Nom.</p><p>Nom.</p><p>Nom.</p><p><em>(Note: Because we are getting ready to <a

href="../2011/12/spicy-turkey-cranberry-pretzel-wiches.html" target="_blank">Spicy Turkey Cranberry Pretzel-wiches</a>), and today I&#8217;m sharing my idea for the new Mini Baquettes.</p><p>Eating the mini-baguettes straight out of the oven, slathered with butter or garlic butter isn&#8217;t a bad idea at all. They will melt in your mouth when you eat them that way, and you&#8217;ll have a hard time eating just one. They would also make perfect sandwiches or paninis. But I decided to go all comfort food on them.</p><p>I have a special place in my heart for French Onion Soup&#8230;I make it for myself from scratch several times throughout the winter months. I&#8217;ve shared my favorite recipe in my <a
href="../breakfast-lunch-cookbook" target="_blank">Breakfast and Lunch Cookbook</a>.</p><p>For this you could use a canned or boxed French Onion Soup (or make your own!)&#8230;then just slice up the Sister Schubert&#8217;s Mini Baguettes, dip them into the soup, covering both sides. Then top with a slice of Swiss cheese. Run it under the broiler or microwave on high for 1 minute, allowing the cheese to melt. Let cool slightly, then serve.</p><p><strong>This bread does a fantastic job of soaking up the french onion soup, and every. single. bite was perfect! </strong></p><p><em>Enjoy! </em></p></div><p><a

Maybe not to you.</p><p>In the freezer I found chicken breasts, peppers and onion blend, loaf of reduced priced bread, slices of pepper jack cheese. And the pantry did make a contribution to the meal&#8230;some jarred salsa!</p><p>Once I had it all out on the counter, it occurred to me that I bought some fajita seasoning at Penzey&#8217;s Spices&#8230;so it was a no brainer!</p><p>Make a melt&#8230;with grilled chicken strips, topped with sauteed peppers, some melted cheese on top.</p><p>And since I had not purchased any of these items in the very recent past, it really did feel like this meal didn&#8217;t cost anything. (Even though it did. On other weeks.)</p><p>That&#8217;s the beauty of coming up with meals from the pantry and freezer!</p><p><a

class="recipe">Note: There is a print link embedded within this post, please visit this post to print it.<h1>Chicken Fajita Melts</h1><p>Yield &#8211; 4 servings</p><p>Preparation Time &#8211; 10 minutes</p><p>Cooking Time &#8211; 10 minutes on the grill, 5 minutes to saute</p><h2>Ingredients</h2><ul><li>1 loaf French bread, sliced in half ($.99)</li><li>2 chicken breasts, grilled ($1.50)</li><li>1 teaspoon fajita seasoning ($.10)</li><li>12 oz bag frozen peppers and onion blend ($.80)</li><li>1 teaspoon fajita seasoning ($.10)</li><li>About 1/4 cup salsa ($.25)</li><li>4 slices Pepper Jack cheese, or Cheddar ($1)</li><li>Fresh fruit&#8230;orange slices for us ($.50)</li></ul><h2>Directions</h2><ul><li>Slice the bread open lengthwise and then cut into sandwich size.</li><li>Season the chicken breasts with the fajita seasoning (or homemade taco seasoning) and grill on both sides until cooked through.  Let cool slightly, then slice into thin strips. (<strong>Save a step</strong>: use up your batch cooked grilled chicken slices.)</li><li>Saute the frozen peppers and onions with some fajita seasoning for about 3-5 minutes, or until the water has cooked off.</li><li>To assemble, spread the salsa on the bottom of the bread. Add the grilled chicken slices, then the sauteed peppers and onion, then the cheese slice.</li><li>Microwave or put under the broiler to melt the cheese.</li><li>Serve Chicken Fajita Melts with fresh fruit.</li></ul><h2>Cost $5.24</h2></blockquote></div></div><p><a

After adding the bread flour make a small indentation in the middle for the yeast, then divide the butter into four parts and place a portion in each corner.
