Baking Day

Money Saving Mom is hosting a “baking day” link up today, so I thought I’d chime in since I’m been baking more lately! Here are the 2 recipes I’ve been using…

Mini Muffins
1 cup rice flour (or wheat flour)
2 T canola oil
2 T appleasuce
1/3 cup sugar
2 eggs
1/2 teaspoon baking soda
1 teaspoon baking powder
1 cup of banana OR grated apple OR pumpkin OR squash (NOT ALL!)

Recently I have baked 2 batches of “apple”, 1 batch of “banana nut”, 1 batch of “pumpkin chocolate chip“, and will do 1 batch of “butternut squash” today or tomorrow. I am mostly using these mini muffins to send with R to preschool for his snack. (Sadly all the preschool snacks are “processed”…I was sending his snack before we changed to Gluten Free, and will continue to send snacks in!) I am finding that “mini” muffins are perfect for little mouths, and that the GF muffins are tastier when they are tiny! I also like this recipe because it only uses 1 cup of rice flour, so that helps keep the cost down. (I know that rice flour is on sale at Kroger for 2 more weeks…so if you are GF or know someone who is…now would be a good time to stock up :)
