I joined in the first #bakingday on Twitter sorta by accident. And there’s another one coming up next week…Tuesday and Wednesday. Hosted by Crystal and Jessica.
I’d love to join in, but don’t think my body would allow me to cook and bake what I have on my list in 1 day! So I started today and will chip away at the list, one day at a time!
Finishing up the freezer stock up list. And then some!
And experimenting with a few holiday recipes! Which I promise to share soon!
So I wore myself out this morning in just 1 hour. And this was all I got accomplished.
Sigh.
See why I’m breaking this up into parts!!!
- In the slow cooker, prepare 2 whole chickens, shred meat and freeze stock.
- Cook 4 lbs ground chuck for spaghetti sauce – froze 6 dinner portions in freezer baggies.
- Whole Wheat Chocolate Zucchini Muffins - Made 36 minis, 8 mini loaves, and 24 regular size muffins. Most of which made it into the freezer!
- Holiday Breakfast Experiment…Recipe coming soon! Sorry for the tease…I just can’t share it yet!

Wow, nice going! Makes me feel like an utter slacker for not getting the applesauce spice cake made that’s been on my list for 2 weeks.

Hey Erin – I read an article online about OAMC that gave tips for browning ground beef. It was a very “hands-off” approach where you just put it all in a pot with water/broth and you basically simmer the beef and then drain and break it up when it’s all done (you can then refrigerate the “broth” and de-fat when it’s cooled). Not sure if you’ve heard that tip before but I just hate standing over a huge pot of ground beef so I’m going to give that one a try!

WOW, you got a lot accomplished in just one hour. It would take me that long to get things prepped for the recipes, i.e. shredding zucchini, and you’re 9 months pregnant! Don’t be too hard on yourself. You’re doing an excellent job getting prepared.
