After our OT appointment this morning, I came home to restock the freezer with snacks. I made the decision back in late October to make snacks for the boys because it would be more frugal. I usually make muffins and cookies once a week. Today I made Pear, Apple and Pecan muffins using this recipe. I doubled the recipe and used 1 pear, 1 apple, both grated, with 1/2 cup of chopped pecans. I’m so thankful for my new KitchenAid! Makes all this baking a little easier 🙂
I then made some blueberry muffins and mini-loaves using the same recipe. For the blueberry muffins, I doubled the recipe, used GF baking flour mix and used 1.5 cups of blueberries.
