Baking – Baking – Baking

by Erin, The $5 Dinner Mom on January 20, 2009

After our OT appointment this morning, I came home to restock the freezer with snacks. I made the decision back in late October to make snacks for the boys because it would be more frugal. I usually make muffins and cookies once a week. Today I made Pear, Apple and Pecan muffins using this recipe. I doubled the recipe and used 1 pear, 1 apple, both grated, with 1/2 cup of chopped pecans. I’m so thankful for my new KitchenAid! Makes all this baking a little easier icon smile Baking Baking Baking

I then made some blueberry muffins and mini-loaves using the same recipe. For the blueberry muffins, I doubled the recipe, used GF baking flour mix and used 1.5 cups of blueberries.

Baking Baking BakingI also made some Brownie Bites and egg free chocolate chip cookies this weekend. Both of these treats are toddler tested and approved!!!

And I ended up making some GFCFSF Apple Crisp. This was my little experiment…turned out pretty well!
