I love the idea of 5 dollar dinners. I wish it was that simple for me. I live 200 miles away from the nearest wal-mart, and my local store charges double because they are the only grocery store and it serves 4 towns. But even if I have to pay alittle more, I love your recipes.

I add whole milk ricotta cheese and omit the shredded cheese and beef for a vegetarian night(not vegan due to the dairy). We often make this meal without using the oven- just cooking on the stove. I stopped baking with glass pyrex- our local abc network here on Long Island did a report on a Consumer Reports investigation regarding exploding glass pyrex and anchor hocking pans. I usually cook frozen chopped broccoli as a side with this meal( I mix my broccoli in with my ziti ). I use a half of a small container of ricotta cheese with one box of ziti and the whole container with two boxes.

I have made a similar recipe for years. I've used many different kinds of dry pasta. I also saute a green pepper and onion and then add in my ground beef to brown in the same skillet. This recipe also works well and is easy to make two pans at the same time. Bake one and prepare the other in a disposable aluminum pan cover with foil and freeze. Thanks for all of your great recipes and tips!!!

My mom and I have made this for years. We add a container of nonfat cottage cheese to extend it further, and to add more calcium, which our family needs since we're not milk drinkers.
