		<description><![CDATA[I cut sweet potatoes in half, bake them slowly cut side down in the oven, take them out of their jackets and puree in the food processor with a little cinnamon and orange juice (just enough to get a mashed potato consistency). I then take a small muffin scoop and freeze mounds solid on a cookie sheet in the freezer. Once frozen I put them in freezer containers and use  them to round out my sons dinner with a veggie - but now my 9 year old is gluten intolerant and he has these in place of bread or rice at dinner. This has been an inexpensive way to have a veggie my boys like ready in a moment in the microwave.
After reading your recipe I will change it up with pumpkin pie spice.]]></description>

		<description><![CDATA[Peel and slice the sweet potato into rounds.  Coat both sides with a little olive oil and arrange on a baking sheet (with sides!)  Sprinkle a little parmesan cheese on the top and bake at 425 until done.

Also I adapted a rosemary roasted potato recipe to be half white potatoes and half sweet potatoes.  Peel and cube the sweet potatoes, cube the white potatoes with the skins on.  Place potatoes in boil water for about 4 minutes.  Then drain and transfer to a baking sheet.  Toss with olive oil, garlic salt and rosemary.  Bake at 425 until done.]]></description>
