I just gave these pancakes a shot today and I lvoed them! We used soy milk instead of regular milk, and pumpkin pie spice instead of apple pie spice, but other than that I stuck to the recipe. One small thing, though. The batter was very, very thick and required another cup or so of apple juice before reaching the right consistency. They were just wonderful, though, and everyone raved about them.

[...] I’ll leave you with one final recipe that adds apples to a familiar breakfast favorite. Erin Chase says she created this recipe almost by accident, when she started experimenting with creative uses for leftover apple cider. Her solution: Substitute cider for part of the milk in a pancake recipe, then add a chopped apple for good measure. Prep time is only 10 minutes, so I’m ready to try some “creative comfort” at breakfast this weekend! ($5 Dinners) [...]

Another good use of cider: Hubby and I really enjoy oatmeal this time of year. We use steel cut oats which takes time to cook. We use apple cider to cook the oatmeal in instead of plain water. Add dried fruit, chopped apple and nuts, cinnamon and brown sugar. We make enough for a week and heat each morning in the microwave for a quick and hardy breakfast.
