by Erin, The $5 Dinner Mom on October 4, 2008

Meal #1
Beef ($1…2 inch cube from crockpot roast is ideal!)
2 Broccoli Heads ($.50-$.75)
2 White Potatoes ($.50)

Directions
1. Bake the potatoes. Steam the broccoli. Let cool a few minutes. Add into blender or food processor with a little water to obtain pureed consistency. Puree. Add a 2 inch cube of beef roast (ideally from a recent crockpot dinner!) into the blender and puree with broccoli and potatoes.
2. Pour mixture into ice cube trays and freeze.
3. Serve by thawing on counter or in microwave. Add a little rice or other grain cereal if it needs thickening!

Meal #2
1 chicken breast ($1), or other meat from chicken roast/bake
1 cup Pumpkin (Fresh or 1/2 of “Pure” Can) ($.50)
1 cup frozen peas ($.50)

Directions
1. Bake or roast chicken. Roast pumpkin upside down in covered baking dish with a little water. Or scoop pure pumpkin from can. Thaw frozen peas. Puree chicken, pumpkin, peas with enough water to make it the consistency you desire.
2. Pour mixture into ice cube trays and freeze.
3. Serve by thawing on counter or in microwave. Add a little rice or other grain cereal if it needs thickening!

Total Cost for 2 meals $4.25 or less!
