$5 Dinners for Baby – Part 2

by Erin, The $5 Dinner Mom on September 26, 2008

Welcome to Part 2 of $5 Dinners for Baby!

Meal #1
Beef, Apples and Carrots

Ingredients
Beef from a Roast ($1)
3 Apples, peeled and cored ($.75)
3 Carrots, Peeled and cut into sticks ($.25)

Directions
1. Parboil (partially boil) apples and carrots, until slightly tender (cooking too long will remove important nutrients and enzymes!). Let cool a few minutes. Add into blender or food processor with a little of the juices used for parboiling. Puree. Add a 2 inch cube of beef roast (ideally from a recent crockpot dinner!) into the blender and puree with apples and carrots.
2. Pour mixture into ice cube trays and freeze.
3. Serve by thawing on counter or in microwave. Add a little rice or other grain cereal if it needs thickening!

Meal #2
Chicken, Apples and Mango

Ingredients
1 Chicken Breast, cooked with little or no seasoings (or portions from a roasted or rotisserie chicken…softer meat is the ideal!) ($1)
3 apples, peeled and cored ($.75)
1-2 mangoes ($.99)
(A mango is ripe when you can put a dent into it when gently squeezing…if you live in the south, you will likely have access to better mangoes than if you live up north! When we lived in the Dominican Republic the mangoes were to die for! Use a fresh peach or other soft fruit for this too!)

Directions
1. Parboil apples, until slightly tender. Let cool a few minutes. Add into blender or food processor with a little of the juices used for parboiling. Puree. Add chicken breast or chicken meat and slices of mango/peach. Puree all together.
2. Pour mixture into ice cube trays and freeze.
3. Serve by thawing on counter or in microwave. Add a little rice or other grain cereal if it needs thickening!

Total Cost for 2 meals: $4.74

Can you add a tag for recipes only? I like reading through your blog when I have time, but I’d love to be able to peruse only the recipes when I’m looking for inspiration.

SigivaldIntegrated versioning and reiiovsn control is so old. Why, every OS just builds that in at the API level and Apple’s the last to the party!Wait? You say that nobody else actually has built-in API-level versioning in their OS?Yeah, funny that.
