In order to maintain balance and keep my sanity, I’ve got no recipe for you tonight. I was hoping to get something cooked up over the weekend, but we ended up going to a Dayton Dragons game last minute and we ate out with the last of our “dining out” cash. And we also went to a friend’s wedding and enjoyed an early dinner. So no cooking this weekend and no recipe from me tonight!

Hi, I linked up a Creamy Cajun Pasta Recipe… I haven’t linked up here before, so of course I did it wrong, but it’s there! I got your cook book at Christmas and use it all the time.

I shopped my freezer to use up meat instead of buying more. Made a chicken rice soup dinner tonight. Used homemade mushroom soup from Stephanie O’dea”s crockpot cookbook, 1st one. It went ok. The meal was from my head, like I do sometimes, but it came out good. Added enough spices that even hubby thought it was good. I think I’ve got that part down pretty good now. I know what to do to make it taste good. Especially if you add more items to the recipe, check the flavor! :-) Happy week!

I linked up a family favorite- spaghetti with meat sauce. We buy the meat in bulk (and by bulk I mean a 1/4 of a cow!) which keeps costs down. I also use home grown and canned tomatoes and I buy the noodles when they’re on sale. However, I’ve never actually broken down the cost of each item to see what the dinners actually cost. That might be an interesting exercise!

I’m looking forward to finding new recipes! (I’m trying to post family favorites on my blog)

Last night I made Creamy Chicken with brown rice. My husband AND five year old son both loved it, and I made it with items I had on hand (doing the “pantry challange” this week.) Simply cut chicken into 1 inch cubes, season with salt and garlic powder. Brown it in a heavy bottom skillet (I use cast iron) with a tablespoon of butter (or margarine.) Remove the chicken. In the same pan put one tblspoon of butter, 1 1/2 tbls of whole wheat flour, and 1 cup of chicken broth. Whisk until smooth (about 2-3 minutes.) Slowly add 1 cup of milk, cook about 2 minutes, stirring occasionally. Add chicken back to the pan until it is cooked through (about 4 minutes.) Remove from heat and it will continue to thicken. ENJOY!

I definitely love the idea of NO WASTE. I try to “recycle” or “upcycle” my left overs all the time. When you have to stretch a buck it helps. That and shopping in your pantry first. I linked up the tostada’s and they are not exactly as I would like them to be, because I was cooking from the pantry that night. But I like to be flexible in cooking and like the pantry challenge.
