Thanks so much for this recipe! I’m going to use the last of my leftover Turkey in this. I know the kids will love it just because it has chips. Funny how they decided what the will and will not eat.

I did something similar with turkey since I got turkey so cheap.

I baked an extra turkey for New Year’s.

A portion of that turkey was added to rice, a can of Rotel, a can of corn, and water. The first day it was a casserole with cilantro mixed in. The 2nd day it was nacho’s with cheese on cilantro on top.

My husband and 2 year old loved it!!!!.

Erin those chicken taco chips look awesome! My hubs and I love to eat appetizer/finger food for supper every once in a while…pop in a movie and enjoy as a family. And chicken nachos is a nice change up from beef. Great recipe.
