Just chop and shred up the leftover turkey meat to substitute for the ground beef and throw in a packet of taco seasoning for about each pound and cook according to the directions.  Serve like regular tacos.  Extra mashed potatoes and veggies?  We make potato soup and use up any leftover rolls for another dinner.  I love taking leftovers and making them into something else. A great (non-traditional) sweet potato recipe could be adapted for leftover sweet potatoes if originally served pretty plain:
5 lbs sweet potatoes
1 cup coconut milk
1 tbls red curry paste
1/4 cup brown sugar
2 tbls butter
Cook sweet potatoes and remove from jackets.
