I have noticed that most gluten free pastas get really mushy so I've learned to really watch it & not over cook it. I have never tried corn pasta & would love to try it.

I would love to win, I am new to gluten free cooking & am having a hard time adjusting. isPermaLink="false">http://www.5dollardinners.com/?p=2446#comment-17544

The trick I've found to rice pastas is to cook it a little longer than you think. The one we usually use firms up after it's been drained. Your mileage may vary.
I have liked corn pasta, but my husband isn't a fan. He loves my lasagna though, which has whatever I happen to have on hand in it--usually spinach, olives, bell peppers, and mushrooms.

The trick I’ve found to rice pastas is to cook it a little longer than you think. Gluten free spaghetti also makes a good substitute for noodles in chicken noodle soup. I've found that if the pot simmers a long time the noodles eventually break up into little 1" long pieces which resemble a certain commercial brands variety of glutinious chicken noodle soup.

I’ve found that with corn pasta you have to watch it especially closely or it can clump up into thick bundles.
