So, I&#039;ll make sure i use fresh lemon juice or lime juice and make sure to take it easy....

I have just reently discovered I LOVE watermelon juice!  Stuck with a lot and no room in the fridge I tossed it in the blender with a bunch of ice, a touch of water and splenda, a whole lot of mint, and a touch of scotch (more for the flavor then the alcohol).  It was fantastic!  I plan to try other spirits to find a perfect summer cocktail.
As for the mint.....I use it sooo much I have tons of ideas!  How about in taboule, cous-cous, or a pasta salad?  My fav is in meat balls with an Indian or Persian inspired sauce and with basil and garlic as a marinade or sauce for grilled shrimp or a white fish like cod or flounder or even trout.  I think I may have even tried it in tuna or chicken salad before...I forget though...
Mint is a great thing to mix into yogurt, pancake batter, any sweet breads or baked goods, or to jazz up a fruit salad.
