Growing up there were ALWAYS two thing that could be found in the pantry…at ALL times! Tortilla chips and PACE PICANTE SAUCE! (Let’s just say my dad had has a slight obsession with the stuff!) So when Pace asked if I wanted to do a giveaway, I was thrilled. For nostalgia’s sake!
The lovely folks at Pace are giving away 5 different flavors of the Pace Specialty Salsas, along with a cookbook, so you can put your salsa to good use!



Pictured above are 3 0f the specialty flavors, Tequila Lime Salsa, Black Bean and Roasted Corn Salsa, and Pineapple Mango Chipotle Salsa. Winner will receive 5 jars of the Pace specialty salsas!

I make taco dip with cream cheese spread on the platter, a layer of cream cheese mixed with spicy taco seasoning, and then lots of salsa (chunkier the better) and topped with finely shredded cheese – serve cold – so yummy!

We put salsa on everything. I love to cook chicken with salsa on top in the crock, salsa on baked potato is a good, light dinner and salsa on eggs is delicious.

We use salsa in everything, but I look cooking my chicken in it for taquitos, empanandas, enchiladas etc

one of our fav mex flavored dinners is one I made up!
brown 1.5 lb hamburger and some chopped onions (1/2 large onion or a whole small one)
drain hamburger well (I rinse) add a can of refried beans to drained hamb. MIX very well…the spicier beans ( the low fat) are good!! spice with Chili powder and garlic powder…..
spread on soft tortilla shells and roll shells up and place side by side in a casserole dish or cake pan. Pour a can of enchilada sauce over top of all rolled tortillas…(red or green) I use red….throw on a bunch of shredded cheddar on top and cover with foil.
Bake 350 for about 20 minutes I think this could be done with a specialty salsa instead of enchilada sauce!
take foil off and bake for another 10 minutes or so. Makes about 8 tortillas…depending on how thin you spread bean mixture
cut in large squares……yum – serve with lettuce ,green onions and sour cream!!

I like to mix it with linguine, black beans and shrimp for a yummy dinner dish
My family’s fav use for salsa is homemade chimichangas that I store in the freezer – 20 huge ones last us at least three meals with salad and sour cream for dipping.
1 jar of salsa
1 lb of cheese
1 can of refried beans
1 pkg of taco seasoning
1 lb. of browned hamburger
20 fajita size flour tortillas
Mix first 5 ingredients together and roll into tortillas, folding in both ends. Freeze 13 or 14 for two meals later (more or less depending on how many people you are serving or how much they eat.
Brush the remaining chimichangas with olive oil and bake for 30-40 minutes in a 350 degree oven.
Serve with salad and sour cream
My calculation is that this meal is under $5. . .around $3 for the chimichangas and a bit more to make a salad and have some sour cream for dipping (divide the container up to use one container for all three meals)

I want to win and I love to make a Caribbean style tuna salad sandwich. I grill foccacia bread on my Geo. Foreman, slather it with Hellman’s mayo and then pile one slice high with tuna salad made with albacore tuna combined with the Pineapple Mango Chipotle Salsa. I sprinkle toasted coconut and toasted pecans over all and put the lid on. A Pina Colada made with my award-winning recipe is a great accompaniment along with some sweet potato fries or chips.

I want to win and I love to make an omelet with sharp cheddar tossed with taco seasoning and the black bean/corn salsa inside(drain a little of the liquid first and add a few dashes of jalapeno Tabasco. Top with Mexican style sour cream. Ole! What a way to start the day!

Salsa on everything— breakfast with eggs, lunch on salads and sandwiches, with tortilla chips, in soups, on chicken . . . love salsa—and it’s a great way to get kids to eat their veggies!
