Ingredients: 1 cup uncooked and rinsed lentils
1/2 cup uncooked brown rice
3 cup sliced carrots
1 lb swiss chard, cleaned and chopped
1 lb kale, cleaned and chopped
3 cups water
1 packet reduced sodium onion soup mix
Directions: Place all ingredients in large pot. Bring to a boil. Reduce heat, cover and cook until rice is done, 20 to 30 minutes.
My 18 month old daughter loves this meail. I have made with both the rice and quinoa...love quinoa. Hope you enjoy!

New to your website but love the idea! It's tomato juice-based vegetable soup with beef & barley, practically a meal in itself. A pot comes in at around $5, but makes at least two meals and a few lunches, so I'm sure it qualifies.
The recipe is at http://fourandahalfchickens.blogspot.com/2009/05/cooking-with-whole-grains-1-barley_20.html

I posted the recipe for Babushka Soup a while ago (‘babushka’ is grandmother in Russian). The other is for a garden frittata that also uses garden veggies and costs about $1.50.
