Yummy and cheap Spinach, Bacon, and Fried Egg Salad...probably less than $5 for a family of four- especially when you use garden spinach!

running late for the $5 challenge. here's a flexible idea for using up leftovers and coming in on budget. my family calls it pasta with stuff and it was $2.40 for a family of 4 tonight.

New to your website but love the idea! Here is another meal for you - this one costs about $3.00 to make and is about $0.50 per serving.

Ingredients: 1 cup uncooked and rinsed lentils
1/2 cup uncooked brown rice
3 cup sliced carrots
1 lb swiss chard, cleaned and chopped
1 lb kale, cleaned and chopped
3 cups water
1 packet reduced sodium onion soup mix

Directions: Place all ingredients in large pot. Bring to a boil. Reduce heat, cover and cook until rice is done, 20 to 30 minutes.

My 18 month old daughter loves this meail. I have made with both the rice and quinoa...love quinoa. Hope you enjoy!

I posted the recipe for Babushka Soup a while ago ('babushka' is grandmother in Russian). It's tomato juice-based vegetable soup with beef & barley, practically a meal in itself. A pot comes in at around $5, but makes at least two meals and a few lunches, so I'm sure it qualifies.

The recipe is at http://fourandahalfchickens.blogspot.com/2009/05/cooking-with-whole-grains-1-barley_20.html

I don't have a meal to post, but have you checked out the Firefox extension YSLOW? It's pretty useful in figuring out why a website loads slowly. Just a thought!

Here are two recipes, one for a cream of summer squash soup that using frozen squash from my garden cost about $1.25 to feed a family of seven. The other is for a garden frittata that also uses garden veggies and costs about $1.50.
