Extra zucchini? How about Zucchini Nut Bread?
So many of my relatives grossed out at the sound of it, but it is now their favorite.
Also, zucchini fritters, or battered and fried zucchini slices.
Or make an inexpensive goulash type meal with diced zucchini in it.

I see you have spaghetti and zucchini planned. I cooked some zucchini on the grill it was ok. We still have alot left that someone gave us. Got any ideas what to do with it?
