Here is pancake receipe that I got from The GF Kitachen by Roben Ryberg that is a great book for us &quot;GF&quot; people.Uses common ingredients.
Buttermilk Pancakes
1/4Cup sugar,2 T shortening,2T oil,1 egg, 3/4C€ cornstarch,3/4 C potato starch, 1/4 t xanthan gum, 1/2 t salt, 1 1/4 t baking powder, 1/4 t baking soda, 3/4 C buttermilk.  Mix all dry ingredients well,then slowly add bittermilk, being sure to remove any lumps.  Batter will be thin.
