I am new to the whole meal planning for the week scenario. I have found that in the past two weeks in which I have started menu meal planning that it is a very budget/coupon friendly way to feed our family of four for less. It has also been nice to know what I am making for dinner before even heading into the kitchen. My biggest struggle so far has been trying to come up with different ideas for a monthly menu so that we are not constantly eating the same things over and over again meanwhile trying to utilize items that I can stock the freezer up with while they are on sale(Example: ground beef for $1.69/lb this week– a steal of a deal when I have been paying anywhere between $3 and $4/lb).

My biggest success with meal planning has been to do some “once a month” cooking. It actually ends up being a couple hours worth of cooking on some separate days when I have the time, but the idea is the same. I’ve been able to prepare things like stuffed shells, pizza roll-ups, marinaded pork chops, etc…..so on nights where we’re here at different times, I don’t feel like cooking, I have no idea what to make, or whatever the issue may be….then I already have something easy that’s ready to go. It has saved me sooooo much time and effort, not to mention money because I can make more things from scratch on those days.

My biggest challenge with meal planning is simply making myself take the time to sit down and do it because my hubbie is in Iraq with the ARMY and that leaves me as solo parent to one 4 year old and three 2.5 year olds. I hate to make the same things all the time, but I hate even worse making something and then being the only one in the house to eat it.

My biggest challenge with meal planning is trying to come up with meals that most of my 7 kiddos will enjoy! I know I can’t please all of them all the time, but I try to make sure that what I make pleases most of them.

My biggest challenge with meal planning seems to be that my recipes are not in one place – i.e., the computer, recipe binders/books, etc. Also, my family has several different tastes/dietary needs, so that’s a challenge too.

My biggest struggle with meal planning is that…well, I hate it! Everything about my life is pretty much required to be planned. With 4 kids under 8 and a single working mom, I need to be planned and ready for anything but…well, with 4 kids under 8, things are almost always changing! I have recently started doing meal planning pretty faithfully and trying freezer cooking. it really has made the last month easier (and less expensive) but…I still hate it.

My biggest struggle is just making the plan and sticking to it. I see when I make a plan and actually follow through with it, I am happy about it. I started a few months ago planning out lunches too (since I homeschool) and I have found that having a lunch plan makes my day run much smoother too!!

I love meal planning and do it regularly. My biggest challenge, though, is getting stuck in a rut and eating the same old things. It’s hard to find the time to try new recipes, especially with the summer schedule upon us. I’m using the same old “quick and easy” or crockpot meals.

My biggest success with meal planning is including one night a week for leftovers…one night to use what we have, save money, and not have to plan! :)

my biggest struggle with meal planning is how hard it is to cook healthily (I’m doing Weight Watchers) for 1 adult and 1 toddler for cheap, without a lot of leftovers (I have very limited freezer space) or repitition

My biggest struggle? When I was in the hospital, I had no taste. No smell. I hated food. I get tired of things very easily. I like to create new meals, never making the same thing twice (with a few exceptions), but I get lazy and then I get in a rut! I LOVE cooking, I love inventing recipes and combining new ingredients! And the biggest challenge is coming up with something if I HAVEN’T planned…

Entry 2 – The two hardest things for me with meal planning if figuring out how to get my produce to last and work in mulitple recipes, and how to get back on track with a late night at work results in pizza ordering as opposed to cooking the planned meal!
