Adding shredded apples with the sugar/cinnamon topping is good.  Another way that I absolutely LOVE is adding one cup of fresh or frozen (thawed) peach slices (that I purchased on sale in the summer, cut up and froze), a 1/2 cup of dried cranberries and 1 tsp. of vanilla.
