Sometimes BBQ beef sandwiches if there is enough left, and then veggie soup- one of my favs!

Good post!

I do very similar things with roast when I make it. I've only frozen the small tomatoes (cherry? plum?) and I just laid them on a cookie sheet as is, skin on, and put the whole thing in the freezer.

Once frozen, I bag them in ziplocks. When I take them out for soup or these burritos I pop them in hot water for a few seconds and the skins slip right off!

For my Anonymous friend <img

Now, speaking of "tomatoes from your garden"....HOW DO YOU FREEZE THEM??? I get lots of them from my neighbor and haven't a clue how to freeze em. Maybe i should rephrase that and say my "pitiful attempts" came out frozen, watery mush!

Me again….Thanks Amy! I actually didn't have green chilies this time around, so I used a can of Rotel and some frozen tomatoes from my garden. Tasted great!

Gotta love those recipes that can be altered for convenience and still be tasty. ;-)

Hi, Anonymous. I typically do the traditional roast (in the oven), then use the leftover in fajitas one night and in stroganoff another night. Your stew looks amazing. :)

~Erin

I, too, get 2-3 meals out of a roast for our family of 5. Would it be about the same (or close to it) to just mix some of the roast with salsa??? I work fulltime and I'm always looking for "quickies" to take for lunch. Think it'd tase the same? Looks good, but even better......THAT QUICHE!!!!!!!!!! OH MY!

Question: for the buritos, I checked your recipe. I put my roast in the crockpot then put carrots, onions, and potatoes around it. Sometimes I sprinkle in some beef bouillon and other times I use Lipton onion soup mix for seasoning. Then I do add water. I don't know how much, but it almost covers the roast.

Yes, the potatoes do get a little brown, but that's just all the yummy roast flavor in them. ;-) I think in the picture I had some leftover mashed potatoes mixed in with the new mashed potatoes from the roast. That's why they aren't quite so brown.

Thanks for asking! Amy

Hi Suze. That’s not a stupid question at all!
