Last night I had the privilege to talk with A Cowboy’s Wife on her new Blog Talk Radio show. I called in to share a few of my Healthy Super Bowl Snack Ideas. You can listen to the show here.

Colorful Nachos
 
Blue Corn Tortilla Chips
1 Can Black Beans, drained and rinsed
1 can Rotel diced tomatoes with green chiles, drained
1 cup low fat monterray jack or cheddar cheese

Lay chips out on microwaveable plate or serving platter. Spread black beans and Rotel over chips. Top with shredded cheese. Microwave 1-2 minutes until all cheese has melted. Serve warm.

Fruit Kabobs

Got any wooden skewers leftover from the summer grilling season?

Fresh Pineapple
Fresh Canteloupe
Fresh Honeydew Melon
Grapes
Bananas
Strawberries
Blueberries
Blackberries

Cut up all the fruit into 1 1/2 inch chunks. Place on skewers and serve with light yogurt dip. Have the kids help you. Make the snack preparation a family affair. And chances are they’ll get their fruit quota in for the day too!

Make a fruit salad for your Sunday breakfast and then use the leftovers to make Kabobs! You’ll like get at least 4 servings of fruit in for the day with this plan :)

Veggie Sticks with Homemade Hummus

Baby Carrots
Celery Sticks
Broccoli Florets
Grape Tomatoes
Homemade Hummus

hummus2 Healthy Super Bowl Snacks

Hummus
1 15 oz can garbanzo beans
2 Tbsp lemon juice
3 Tbsp
sesame tahini or natural peanut butter
3 1/2 Tbsp water or bean juice
1 garlic clove
Salt/Pepper, to taste

Place all ingredients in food processor and blend until smooth. Serve with fresh veggie sticks or whole wheat crackers!

But the really important questions are…

Who are you rooting for??? Do you even know who is playing??? (I didn’t…had to ask Hubs!)

I only just discovered the Super Bowl was even coming up. I figured it had probably already happened, lol. No clue who’s playing.

I like the fruit kabob idea! So simple too. And the hummus… never thought of using peanut butter in place of tahini. I’m gonna have to try that. Cuz hummus at our local grocer’s is atrocious for the amount rec’d! And well, I have a big bag of sesame seeds I’ve been meaning to make tahini with, but haven’t gotten around to it. Thanks for the post.

I never know who’s in the super bowl, but the Cardinals are going for the first time in 67 years!!! Plus, Kurt Warner (the quarterback) is an amazing man and a sold-out Christian, so how can you not support him!?!??

I am rooting for Kurt Warner – he’s an awesome guy! I live in St. Louis and have been a Bears fan for 25 years….even when the Cardinals were here. ;-) It will be the first time I want the Cardinals to do well, but really it’s all for Kurt.

LOVE this blog!
I will def put a link to it on mine.
I’m not a football fan, but hubby and kids are. So we plan a big day for it. As a special treat, I got the kids $1.00 football cups at Roses (I was there buying $1.00 Nature’s Own bread), and we’ll have football-shaped brownies (we’ve done the chocolate rice crispies, as well), salsa, chips, Totino’s pizza rolls (on sale at Lowes Foods + coupon = $.50 per 7.5 oz. box), Peppridge Farm 3-layer cake – BOGO, and a few other things.
LOVE this site – can’t wait to tell my friends and family about it!!!
