My family has been GF for about 6 years now--at the time we had 3 children, but now have 6, so that's 8 people eating GF at home (hubby eats what he wants at work).

Some money saving hints that have helped me--buy tapioca starch and potato starch at the local oriental store. They are closer to $1 per pound than to $3 for the stuff at the health food store.

We buy rice flour in bulk on-line or get my health food store to order us a bulk bag. $1 per pound is so much better than the price of the little bags.

We don't use the mixes because it's not cost effective for so many of us. There are lots of good bread recipes out there, especially if you have a bread machine (That is really clean and only used for GF stuff).

We order a fair amount from Amazon.com or from vitacost.com. They have amazing deals on GF stuff. It costs a lot up front, but once you get started, you rotate it through your budget. The stuff at Amazon (pasta, crackers, mixes, cereal) is eligible for free shipping, but you have to buy a whole case.

We use a lot of corn tortillas. They are great lunches for wraps, quesadillas, pizzadillas (cheese, tomato sauce, pepperoni), and can even be cut in strips and used as a noodle substitute in lasagna.

Hope these ideas help someone else not break the bank, but keep their family healthy!

My middle son (9) is allergic to dairy, gluten, soy, eggs, fish and nuts and has been since birth. I'm pretty good at making things for him from scratch but any way I look at it it is still so expensive. I live in the middle of nowhere though way up in northern Canada so I have to pay to have most things shipped in. I envy those that have more selection right in their very own grocery stores.

My son is also GF and I have found that making the Bob's Red Mill Homemade Wonderful Bread mix is the best. But leave the vinegar out it actually stunts the yeast...do that with many GF recipes that call for vinegar and yeast. My son loves this bread and I can find it on sale most of the time at Kroger. The other stuff is only good for toast...too hard!

Christy

My son was on the GFCF for more than two years, and I remember my MIL making a very similar casserole for him with the bread one Christmas. From what I recall, he liked it.

Love your blog!
