Bacon Wrapped Apple BBQ Chicken

So this meal is totally random. Made it up as I went! This is the last day that I will be cooking for a while, so I’m trying to use up what I’ve got in the fridge (because I can’t let anything go to waste :) I’ll be back in the $5 Dinners Kitchen just after the new year…and I’ve got lots of exciting things coming up in the New Year!
I had just enough BBQ sauce, 1 lemon, an apple and a few slices of bacon waiting to be eaten. So here’s what I came up with!

Ingredients
3 chicken breasts ($2.29)
1/2 cup BBQ sauce ($.20)
1-2 apples, peeled and grated ($.50)
1 lemon, juiced ($.30)
6 slices bacon ($.50)
2-3 sweet potatoes ($.99) I still have one more package left in the freezer from my “mashfest
1 cup chopped broccoli ($.25)

Directions
1. Combine BBQ sauce with grated apple and lemon juice.
2. Place chicken breast in crockpot, pour BBQ/apple mixture over the chicken. Wrap 2 pieces of bacon around each chicken breast. Set to low and cook for 8 hours.
3. Cook frozen broccoli as directed on package.
4. Slit sweet potatoes with knife or vent with fork. Bake sweet potatoes at 350 for 1 hour in baking dish with 1/4 inch water. Cover with foil. Remove and let cool about 10 minutes. Peel skins off of the potato and mash. Serve with cinnamon and butter if you like. We eat them “plain”.
5. Serve yummy chicken breast with side of broccoli and sweet potatoes.

This recipe sounds GREAT !! I will probably do it in the oven. Saw you on Rachael this AM and looked up your Website. Love It..also shared it with my 26 year old Granddaughter who has a husband ,a 5 y/o and a 6mo. old ,and is always looking for healthy and cheap menus. Thanks from all of us. Made this today for dinner .. I didn’t realize it was a crock pot meal, I baked it @ 350 covered for 20 mins then I took the foil off and put it under the broiler for about 10 mins to get the bacon crisped … so darn good!! (I snuck a little veggie in there by grating 2 carrots in with the apples and the kids never noticed!!)

This was some of the best chicken I have had in a long time. So easy and moist. I liked the other persons idea to put carrots in with the apples. Thanks for the great recipe.

I made this but i the Chicken was dried out to much!, and they were pretty big sized chicken breasts. I think at about the 6 and a half hour mark is when i should have taken them out. But the flavors go very well together. Was yours dry at all? Im going to try it again sometime, and wondering your opinion. Thx!

No Kerry, ours was not dried out at all…it was quite tender. I have heard/read that some crockpots cook differently than others! You could certainly cook it for less time, just as long as it’s not pink in the middle, of course!
