White Chicken Chili

This crockpot meal was inspired by Lynn at Lynn’s Kitchen Adventures. I modified her recipe slightly…to fit our dietary needs/restrictions.

Ingredients
1 chicken breast ($.75) Remember to buy when on sale for $1.88/lb and freeze!
1/2 onion ($.15)
2 T butter ($.10)
2 T rice flour (use white or wheat flour) ($.05)
1 cup milk or rice milk ($.15)
1 4 oz can green chiles ($.99)
2 garlic cloves, minced ($.05)
1 cup dried beans ($.25)
4 cups water
1/2 lb asparagus ($.74)
2 T extra virgin olive oil ($.10)
1/2 cup peas ($.25)

Directions
1. Dice chicken breast. Chop onion. Place chicken, onion, minced garlic, can green chiles, dried beans and water in crockpot. Yes, beans can be uncooked. Just be sure to rinse and sort them!
2. Make homemade white sauce. (You can use a can of cream of chicken soup if you like, but we can’t have that, so I make my own!). To make sauce: Melt butter in saucepan over medium heat. Add flour and quickly stir together. Quickly add 1-2 cups milk and WHISK! Sauce will thicken as it cooks. Add more milk for thinner consistency. Add more flour to thicken it up.
3. Add white sauce to crockpot with other ingredients and stir through.
4. Cook on low for 8-10 hours.
5. Drizzle EVOO over asparagus. Let sit for 15-20 minutes. Then saute a few minutes until it turns brighter green color. Remove from heat. Serve with crockpot white chicken chili!

My daughter loves White Chicken Chilli. She either gets her fix at Don Pablo’s or her husband makes it for her. I’ll give her this recipe for them to try. It looks yummy!

So I don’t have to cook the beans? If my recipe calls for a 30oz jar, how many dried beans would I put in? Do I need extra liquid?
