Another great use for the mashed sweet potato is to make it into sweet potato pie! I use a homemade graham cracker crust because its easy and just as tasty. I also can bake mine in the medium size toaster oven rotating it every 15 minutes while baking. It's a great way to incorporate sweet potato's, because they will think it is pumpkin. I also use a recipe that doesn't call for half n half or evaporated milk, just regular milk.

Just linked back here from your recent post...

So, for baking, do you halve the potatoes, like you would for squash or just place them washed and whole in a glass dish with water? I'm going to mash some for my freezer, I've already tried sweet potato sticks (recipe link below)
http://mommie-tromie.blogspot.com/2008/11/menu-plan-monday_24.html

2Blue1Pink...I'm not an expert, but I plan to use mine within 1-2 months. They would likely be ok longer, but might get bad freezer burn?!?

Thanks for posting this. Sweet potatoes are my DD's favorite, she would eat them with everymeal. Well Foodlion has them on sale here for .19!!! I got 20lbs yesterday. So this weekend I will be baking and mashing. How long do you think they are good for in the freezer?

Here is another tip for you that I learned about freezing potatoes. They seem to do better if you add an emulsifier like butter, sour cream or cream cheese. It holds the potato starch together and makes for tastier, creamier, re-heated taters! I love your blog and hope to find some sweet potatoes on sale this week, too!

We are going gluten free, can you tell me the brand name of the GF pizza mix? So far the only GF pizza mixes are more than 5.00 a box at a store 4o miles away down the mountain. We are looking forward to living in Dayton once again. The grocery deals look better than I remember from 10 years ago.
Sarah

Yep...bake with a little water in the baking dish. Covered with foil. Bake 1 hour at 350...a little longer if they are super fat potatoes! Let cool a few minutes so you can peel off the skin. Then just mash. Let cool a little bit before bagging.
Thaw by placing plastic bag in bowl filled with warm water. (be sure bag is sealed :)
If water in the bowl gets cold and its taking a while to thaw, replace with more warm water. Should thaw pretty quickly!

Sweet potato question: so you just baked them all and then mashed them? Do you have to let them cool completely before bagging them for the freezer? Also, do you just thaw them the night before you need to use them? Many thank for your help!
