Cream of Broccoli Soup and Baked Chicken

“Freezer” Soup! I threw this soup together with some ingredients from my freezer stash! Celery, broccoli and a serving of mashed potatoes all went into this soup. I didn’t have any chicken stock or boullion, so it went with out (but it definitely need it!). I will make more stock with the leftover chicken.

Ingredients
2 split chicken breasts ($1.69)
3 T Olive oil dressing ($.25)
2 broccoli heads ($.44) Remember these were on sale and I blanched and froze them !
1 portion of leftover mashed potatoes (Free? or $.50 for 3 potatoes)
1 cup chopped celery ($.20)
1 cup shredded sharp cheddar cheese ($.75) Recent sale 4 cups for $3…stashed a few bags in the freezer!
1 can evaporated milk (FREE!)
1/2 cup milk ($.10)
Salt and Pepper
1 sweet potato ($.79) for the boys…on sale this week!
1/2 peas ($.25) for the boys…as I don’t think they’ll go for the soup…we’ll see…

Directions
1. Place evaporated milk, milk, mashed potatoes (or sliced potatoes), celery and chopped broccoli into saucepan. Bring to boil, reduce heat and let simmer 45 minutes.
2. Marinate chicken with olive oil dressing, or other favorite marinade. Bake chicken breasts in baking dish at 350 for 35-45 minutes, until juices run clear.
3. Slice or vent sweet potato with fork prongs. Bake sweet potato in oven at 350 for 55-60 minutes. Remove and let cool. Slice open, scoop out and mash. I also cut it in cubes for easy finger foods. Cook peas. Serve to hungry boys!

Cost $4.47

P.S. The soup would have been perfect if it’s had some chicken broth! Next time! Next time! And the boys didn’t go for the soup…I don’t normally “short order” cook, but tonight made an exception!

Congrats!
I recently found your site and am loving it. I coupon and will be teaching classes but there is so much more to being frugal that just the deals. I am trying to teach people to not only save money but to live on a budget and trying to maintain a per dinner budget is an awesome way to go about that.

How do you serve the sweet potato after baking it? Do you mash it up or ??? I bought some today, but have never made anything with them.
