Apple Walnut Pork with Green Beans and Wild Rice

So there was a BOGO (buy one get one free) internet printable coupon not too long ago for Uncle Bens wild rice boxes. I grabbed 2 boxes knowing that there was a “seasoning packet” inside. I bought them so I could have a warm “wild rice” meal sometime this fall…and what a perfect day!
 
 
Confession: I had no idea what we’d be eating when I grabbed the rice box (I was busy making 2 pumpkin chocolate cheesecake pies for Thanksgiving…parting gifts for my guests!)…Looked on the back at the “recommended” recipe and sure enough, I had all the ingredients…thankfully there was some leftover pork in the freezer from my “Pauly Shore interrupted” cooking segment 2 weeks ago! So here it is…slightly modified! Thanks Uncle Ben!
Ingredients
1 lb pork roast ($1.39)
1 granny smith apple ($.25) On sale 4/$1!
1/2 cup chopped walnuts ($.50) Big time sale at Kroger this week!
1/2 cup apple juice ($.25)
1/4 cup syrup or honey ($.25-$.50)
1/2 bag Cascadian Farm Green Beans ($.75) I stocked up on these last week!
1 box Unlce Bens wild rice and long grain rice ($1.14)
1 T olive oil ($.10)
Garlic powder ($.05)
Salt and pepper

Directions
1. Cook rice according to instructions on box. Leave out the seasoning packet! Add your own spices!
2. Cook green beans on stovetop or microwave.
3. Thaw or cook pork roast…this would be a great way to use leftover pork! Dice apple, throw into skillet. Add apple juice, syrup and walnuts. Saute for 4-6 minutes until juice reduces down. Add pork roast, stir mixture through pork and let cook for 3-4 minutes.
4. Serve pork with rice and green beans. A delicious late fall dinner to warm up any tummy!

Do you use the seasoning packet for anything? or do you end up just tossing it?

What do you do with the garlic and salt and pepper, put it on the roast I assume. I’ve noticed in a couple of the recipes some ingredients are not specified or used in the directions. I’m making this right now so I guess it’s a bit late and I’ll improvise, but future recipes will be helpful it states when the ingredients are used.

Ok One more …the directions say to “Saute for 4-6 minutes until juice reduces down. Add pork roast, stir mixture through pork and let cook for 3-4 minutes.” However, it took me more like 25 minutes to cook this. I did this in the frying pan because there wasn’t any specific instruction. I would like to try to make this again, but was hoping you could let me know the directions for the meat so I could prepare it better. I had people over for dinner and they were all waiting because I thought it was only going to take 3-4 minutes as the directions say.
