Ingredients
2 lbs sweet potatoes ($1.58)
1 stalk celery ($.10)
1/2 onion, finely chopped ($.20)
1 apple, peeled and thinly sliced ($.88)
Salt and Pepper
Pork Broth or water (free!)
Asparagus ($1.18)
Extra Virgen Olive Oil ($.05)
Homemade Buns ($.48)
Directions
1. Roast sweet potatoes in baking dish with 1/4 water and covered with foil at 350 for an hour. Remove from oven, let cool and peel off skins. I did this last night while baking the oven fries.
2. Chop onion, celery and thinly slice apple. Place all into crockpot with sweet potatoes, pork broth and water. I used 4 cups of liquid. Cook on low 8-10 hours. When done, puree with immersion hand blender.
3. Before dinner, drizzle EVOO over asparagus, let soak for 30 minutes. Saute 3-5 minutes until turn bright green and are still slightly crisp. Serve with warm sweet potato soup and homemade bread machine rolls!
This soup was delicious! The taste was perfect, and I think the pork broth really helped enhance the flavor! I will definitely make this again!

Since it is going to be pureed anyway, you could probably save a significant amount of money by replacing the asparagus with broccoli. But I do enjoy asparagus!
