Ingredients
1 lb Pork Roast ($1.90 Click here to see the deal I got on this roast!)
Water or Broth
Salt/Pepper
2-3 Apples, peeled and sliced ($.75…Big apple sale at Kroger this week, and throughout the fall!)
1 t cinnamon ($.05)
2 T brown sugar ($.05)
2 T lemon juice ($.10)
1/2 onion, chopped ($.20)
1/2 bunch asparagus ($1)
2-3 T EVOO ($.20)
1 cup rice ($.30)
Directions
1. Place 1/2 inch water or broth in base of crockpot. Place roast into crockpot. Sprinkle with salt and pepper. Add onions around the roast.
2. In bowl, combine apples, lemon juice, cinnamon and brown sugar. Toss well. Pour over roast in crockpot. Cook on low 8-10 hours.
3. Snap ends off asparagus. In another bowl, drizzle EVOO over Asparagus. Let sit 30 minutes or so. Then saute for 5-7 minutes until tender, yet crispy.
4. In saucepan, boil 2 cups water. Add rice. Bring to boil, then cover and simmer 20 minutes.
Rice with apples = Yumminess! Sweetened pork = More Yumminess! Asparagus = Even more Yumminess!
After the meal, I decided to strain the pork broth to use in my upcoming Sweet Potato and Apple Soup. I have never saved pork broth, but I thought this sweet and cinnamony broth would be perfect for that soup!

I’ve GOT to muster up the guts to go ask for those apples that I see hangin’ on those apple trees a couple miles down the road. The worse thing they can tell me is “no”, right???

Mmmm…. another one to try. By the way, I think your Kroger has better produce deals than my Kroger does. I’ve never seen apples that cheap–except at the orchard just up the road where I can get them for $0.80/pound. We love recipes we can use apples in–thanks for this one!

Checked on my crockpot at lunch at had a little taste….yummy!!!! even without the onions!!!
