So here’s the chili, with the free peppers, that will go on top of roasted red potatoes later tonight!
Ingredients
3/4 lb ground beef, cooked ($1.12)
1 cup dried beans ($.10)
2 cups water
1 onion, chopped ($.30)
1 green pepper and 1 red pepper (FREE!!!)
1 can diced tomatoes ($.23)
1 can tomato sauce ($.33)
1 T chili powder ($.03)
1 t garlic powder (I’m all outta the fresh stuff!) ($.01)
Salt and Pepper
6 Red Potatoes ($1) 1 cup shredded cheese ($.75) Recently on sale at Kroger!
1/2 cup peas ($.25)
Directions
1. Place all ingredients in crockpot and BREW! Cook on high 8-10 hours.
2. Drizzle olive oil over potatoes. Season with salt and pepper. Roast in oven for 30-45 minutes, depending on their size. Remove, slice open and pour the chili on top!

What are the can sizes for the tomato sauce and diced tomatoes? Did you presoak your dried beans before cooking the chili?

This looks delicious! I can’t wait to try it. BTW- your comment about Texas football had me laughing..you are SO right. When we moved to TX I was amazed at how much attention highschool football received. I had never lived in an area where the news (and people) so avidly followed not only pro-sports and college sports but highschool too.

This looks fabulous and I love how low cost it is…..although, I will have to buy the peppers.
I think this would be great with a potato bar of sorts— the people could add anything they like to their potato….=)

One year (at least one day before Halloween, I can’t remember exactly) the kids and I went out for a walk and found out it was trick-or-treat night for our town. I called my husband and said we inadvertently went trick-or-treating. He didn’t quite believe me!
One older neighbor lady chased us down the street to give us candy. The kids weren’t dressed up or anything.

I think Beggar’s Night is a midwestern thing. I grew up in Iowa and we always went on the night before Halloween. I’m sure there’s some tradition behind it, but I’ve got no idea what it is.

LOL We lived in Texas and they had Halloween a night early. The reason because that year Halloween fell on Wed. night a.k.a Church night. Since we weren’t a member of any of those congregations we had no idea that they had changed Halloween Night.
