I got this idea from Laura’s Menu Plan Monday post on September 15th. I didn’t have canned peaches, so I substituted with orange juice and brown sugar.
Hubs gave me some MAJOR props on this meal. It was seriously delicious! I’ve not been to cooking school or anything, so I don’t know much about what flavors work together and what doesn’t. I can tell you after eating this that OJ and Rosemary baked with acorn squash and chicken MESHES into music in your mouth! This meal is worth a try!!!
Ingredients
2 Bone In Split Chicken Breasts ($1.79)
1 acorn squash ($1.17)
2 Broccoli Heads ($.44)
1/4 cup OJ ($.05)
1-2 t brown sugar ($.01)
Spices: Salt, Pepper, Rosemary, Minced Garlic ($.10)
1 cup rice ($.30)
Directions
1. Pour OJ into botton of 9×13 baking dish. Place chicken breasts into baking dish. Poura little more OJ over chicken breasts. Add spices to chicken.
2. Put acorn squash in microwave for 3-4 minutes to loosen skin and make easier to cut. Let cool a few minutes and then slice off skin. Scrape away seeds and cut flesh into 1″ cubes. Place cubes in baking dish around chicken. Sprinkle salt and brown sugar over squash cubes.
3. Bake at 350 for 1 hour.
4. Cook 1 cup rice with 2 1/4 cup water and a dash of salt. Bring water to boil. Add rice, return to boil and then cover and simmer 20 minutes.
4. Steam broccoli and serve with chicken, rice and squash!

Can’t wait to try this one! So far all the recipes of yours I have tried have been a hit with my hubby! He even said the apple pork was the best crockpot meal I’ve ever made sinec we’ve been married! (And he is hard to please!!!) LOL!
I am so envious that 2 chicken breasts only cost you $1.79. Where do you shop? The absolute cheapest chicken I can find is nearly $2 a breast…
I may have to change my Menu Plan this week. We grew Acorn Squash in the garden and I haven’t found a recipe I like with them yet. Thanks
I live in Nortwest Fl. and we don’t have a Kroger here either . I know there are some in Southeast Ga. (300 hundred miles away !!1)

My oven is broken so I’m making this in the crockpot tonight. I hope it turns out! It sounds yummy!
It turned out great in the crockpot, the prep only took about 10 minutes and then we had a delicious dinner whenever we were ready to eat! I didn’t do anything different from the directions except put it in the crockpot instead of a baking dish. I turned it on high for about a half hour just to get it heated and then turned it down to low and cooked it for about 6-7 hours.
About how much spices do you add to this recipe?
A few shakes of each spice…I tend to cover a dish with a thin layer of the spices I use.
