Tonight I made “Almost Cobb Salad” for us. The boys ate mostly “toppings” with an attempt at the lettuce. Not the most kid friendly meal, but they didn’t leave the table starving!
I had to cave in on the rolls. Yesterday I nabbed 2 Grands Biscuits that were on sale $1 each and I had a $.50/2 coupon that doubled. This made each one $.50. I typically don’t buy those, but am glad I did. At 4 pm, my “just ran 6 mile brain and tired body” realized I had not put the dough into the bread machine, so the Grands Biscuits it was. I intended to make homemade buns, but the Grands will work for today.
Ingredients
Shredded chicken ($1.25)
Lettuce Head ($.88)
3 hard boiled eggs ($.30)
1/2 cup shredded cheese ($.42)
1 tomato, diced ($.52)
1 cucumber, diced ($.55!!! Big sale at Kroger…couldn’t believe this one!)
Dressing ($.50)
Grands Biscuits ($.50)
Directions
1. Cook chicken, shred. (I used parts of a rotiserrie chicken I bought with a Kroger coupon this week for $4.99…I will use the chicken for 4 meals!)
2. Cut lettuce with lettuce knife to prevent browning.
3. Dice tomatoes, cucumber and hard boiled eggs. Toss with the lettuce and chicken. Add dressing.
4. Serve with warm homemade rolls (Or Grands Biscuits?!?)!
Cost $4.92
Basically every ingredient was on sale and I used a coupon for the chicken and biscuits! I didn’t intend to match this meal with the sales…just worked out that way!
This made enough for a whole meal tonight and for side salads with our burgers tomorrow night! All for less than $5!!!

I love your blog. Saw you on RR and decided to check it out. I love the idea of dinners for less money. However, I live in a remote area in Northern Manitoba where food prices are high and our stores do not generally have coupons around and the Winnipeg paper only has a coupon insert on Saturday – and most of them are for items I wouldn’t buy. So not much help then. Any ideas on how I can get on the coupon train too?
Great job on RR – and I’ll keep checking back. I’ll be trying the Cobb Salad recipe – but I already know I will not be able to make it that cheaply…
