Vegeterian Chili

Ingredients
1 cup red, black beans (mixed) ($.30)
1/2 green pepper and 1/2 red pepper, chopped ($.75)
1/2 onion, chopped ($.30)
1 15 oz can crushed tomatoes ($.69)
1 small can tomato sauce ($.33)
1-2 cloves garlic ($.10)
Chili Powder ($.59) or other favorite spicy spices
S/P
1/2 cup shredded cheese ($.42)
1 Zucchini, sliced ($.79)
EVOO

Directions
1. Soak beans in water overnight. Cook beans covered with at least 1″ water for 1.5 – 2 hours, until tender. Save a litte juice and drain off the rest.
2. Put beans and a little juice in crock pot. Add tomatoes, tomato sauce, spices, peppers, garlic, onion. Set on high or low (depending on your timing! It will come out fine either way!). Serve topped with shredded cheese.
3. Saute sliced zucchini in extra virgen olive oil. And enjoy!

Interested in trying this one. My husband has vegetarian tendencies… but I’ve been nervous about trying a veggie chili. Thought about making normal chili with like, Boca crumbles or something. Might try this though.
