I made pumpkin pancakes this weekend and have pumpkin left over. Was going to look for a recipe to use it up. I was thinking pumpkin muffins or pumpkin choc. chip cookies. I hadn’t even started looking yet and found this one in my email. Yummm! Thanks for posting!

@Stacey, Canned pumpkin is actually out of stock in a lot of stores. There was a pumpkin shortage last year, and the are still trying to catch up with this years I guess. If you google pumpkin shortage, there are a ton of links (including on Libbys.com, one of the biggest canned pumpkin companies) Naturally there have been a bunh cof recipes calling for canned pumpkin that I have wanted to try, and I can't find it around me!

I actually found a large can of it at Target a couple of weeks ago in the clearance section, I wish now I would have bought a couple of them!

Does anyone know where you can purchase canned pumpkin year round? I have been really wanting to make these muffins, but can’t find pumpkin in any of the stores I have looked in.
