Autumn Chicken

Ingredients
4 Chicken Thighs ($1.89�I got a bunch at Sam’s not long ago�marked “Price reduced for quick sale”�they went straight into my freezer)
2 Apples, sliced ($1.49) Apples will be on sale for most of the fall!
� onion, sliced ($.30)
1 cup apple juice ($.20)
Salt and Pepper
Dash Cinnamon ($.10)
3 T lemon juice, to prevent browning of apples ($.10)
1 cup rice ($.30)
2 Broccoli Heads ($.50) Broccoli will also be cheaper throughout the fall! Recently on sale at Kroger for $.99 for 4 heads!!!

Directions
1. Pour Apple Juice into the crock pot. Place chicken into the juice. Sprinkle with salt and pepper. Add sliced onion around chicken.
2. Slice apples and mix with lemon juice and cinnamon. Place on top of chicken in crockpot. Set on low and cook for 8 hours.
3. Make 1 cup rice with 2 � cup water. Bring to boil, and then cover and simmer 20 minutes.
4. Steam broccoli in steamer or microwave.

This was yummy. I ended up mashing the apples into applesauce and added a pinch of brown sugar to it for the boys. They loved it!

This does look good–very similar to an apple chicken recipe I have, but I like the addition of potatoes. I’ll have to try it! And I love the new site design.

Love your site and am looking forward to trying a lot of your recipes. I am trying Autumn Chicken tonight. Do you know if Apple Juice can be frozen? I had to buy a gallon of juice and we just don’t really drink juice. The bottle says to use it within 5 days. Thanks for you site. it is great!

Yes, you could certainly use frozen apple juice!
