Chicken Tortilla Soup

Ingredients
1.5 chicken breasts ($1.50) or leftover chicken from previous meal (free!)
4 tortillas ($.75)
1 Can Rotel diced tomatoes with green chilis ($.65) or use fresh tomatoes and add salsa
1/2 onion, chopped ($.30)
1 cup milk ($.20)
1 cup shredded cheddar cheese ($.85)
4 corn cobs ($1 in August!)
2 T butter ($.20)

Directions
Cut chicken breast into cubes. Begin to boil in 1 qt of water. Add Rotel tomatoes, onion, milk and cheese. Let simmer an hour. About 10 minutes before serving, add torn tortillas to soup.
Cook corn and serve HOT with butter!

Cost $ 5.45
A little over $5, but a delicious early fall meal!

How do you keep track of how much each meal costs you? I would love to be able to see how much we are spending for each meal, but haven’t quite been able to come up with a system that allows me to keep track.

For those of us who are cooking idiots — soft tortillas or hard tortillas in the soup?

Hey, SH. Since the recipe calls for torn tortillas, that would be soft and since I’ve had this kind of soup at restaurants, I believe it should be soft corn tortillas to make the right flavor. Hope that helps! :)

I am so glad I found your website. My husband was just laid off work and I am going to need to really watch the grocery budget now. Feeding a family of 8 will be a challenge.
