Bourbon Chicken

by Erin, The $5 Dinner Mom on August 28, 2008

Ingredients
4 Chicken Thighs ($2.50)
1/4-1/2 cup store-bought bourbon marinade ($.50)
1 cup rice, uncooked ($.25)
1-2 small summer squash ($1.29)

Directions
1. Marinate chicken thighs in marinade in Ziploc bag, at least 30 minutes. Preheat oven 350. Cook thighs 45-60 minutes in glass dish.
2. Cook 1 cup rice with 2 1/4 cup water. I like to add a “dollop” of butter for extra flavor. Throw in a little marinade to match the flavor to the chicken!
3. Slice and steam summer squash.

Cost $4.54

do you think you could do this same idea in a crock pot or use boneless chicken and then fry it up in a skillet for fajitas or just by themselves
